Also known as “Goosefoot Wood,” this nectar is challenging to collect in cold weather and is quite rare during winter. It belongs to the same family as ginseng and is often used medicinally. The nectar crystallizes easily and has a dense texture. Its aroma is elegant and fragrant, with a subtle hint of ginseng detectable upon deeper sniffing. Unlike sweet honey plants, it initially presents a sweetness upon tasting, which gradually gives way to a slightly bitter ginseng flavor. This creates a nuanced bittersweet profile with a mature taste. Valued for its medicinal properties, it offers natural anti-inflammatory and antiseptic benefits and is rich in vitamins, flavonoids, antioxidants, and phytonutrients.

The unique winter honey from northern Taiwan, “Ivy Tree Honey,” is renowned as the “King of Winter” and is a favorite among honey enthusiasts. Its production is limited to the period between December and January. The flowering of the “Ivy Tree” can be influenced by winter cold snaps, and extreme low temperatures can affect bees during honey collection, resulting in limited quantities. These harsh conditions contribute to the honey’s distinctive flavor profile. Ivy Tree Honey features a subtle, deep aroma with a sweet yet fresh aftertaste, and its flavor is pure without being cloying. Over time, its sweetness intensifies, making it highly desirable. Because it crystallizes easily, it can be enjoyed spread on bread and biscuits or incorporated into dishes for added flavor.

How To Consume:
Eat it directly or brew it with water. You can use warm water to brew it, but the water temperature should not exceed 50 degrees to prevent the nutrients in honey from being destroyed by high temperatures. It is also suitable for adding to dishes or grilling for more flavor.

Shelf Life: 3 years (Please use it as soon as possible after opening)

Important to Note:
1. In order to retain its nutrients, it is not recommended to brew in hot water above 60 degrees.
2. It is not recommended to eat under one year of age.
3. When the temperature is low in winter, it is easy to crystallize.

Storage method: Storage at room temperature, no refrigeration required. Place in a dark place, avoid sunlight and high temperatures.
